Ingredients: Oxtail Soup

  •           1 oxtail
  •           Water (for 2 boiled)
  •           Lemongrass (chopped) 5 stalks
  •           20 kaffir lime leaves
  •           2 liters of water (for soup)
  •           3 Onions (large diced)
  •           10 garlic cloves
  •           1 small tomato
  • 3 tablespoons tomato sauce
  •           1/2 cup chopped ginger
  •           4 large tomatoes (quarter cut)
  •           3 cinnamon sticks
  •           2 tablespoons pepper
  • 2 tablespoons salt
  • 1 potato (large diced)
  •           1 cup coriander root and coriander
  •           3 lemons
  •           2 celery
  •           1/2 cup paprika


          1. Boil once. 1 Boil the oxtail with plain water. Wait for the water to boil first, then add it. Always wait for the bubble spoon to discard. The bubble makes it smelly. Boil for 20 minutes, then scoop it up and pour the water away.
